- 1/4 cup honey
- 1 teaspoon vanilla extract

- 1 cup dark chocolate, melted

Instructions
- Line a baking sheet with parchment paper and set aside.
- In a large bowl, mix together the crushed rice cakes, peanut butter, honey, vanilla extract, and mini chocolate chips until well combined.
- Using your hands or a small scoop, form the mixture into 1-inch balls and place them on the lined baking sheet.
- Chill the truffles in the fridge for at least 20 minutes to firm up.
- Dip each chilled truffle into the melted dark chocolate, then place back on the parchment paper.
