Instructions

- In a large bowl, whisk together flour, baking powder, salt, and matcha powder.
- In a separate bowl, beat the eggs with sugar until slightly frothy. Add milk, oil, and vanilla extract, and mix well.
- Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix. Stir in pistachios and white chocolate chips.
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Bake for 16 to 18 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Optional: Sprinkle with powdered sugar or chopped pistachios before serving.
