Description

Pineapple Sweet Rolls are soft, fluffy rolls filled with a sweet and tangy pineapple filling, spiced with ginger, and perfect for breakfast or dessert.


Ingredients

  • 16 ounces canned crushed pineapple in juice
  • 1/2 cup granulated sugar
  • 1/4 teaspoon ground ginger
  • 2 tablespoons cornstarch
  • 2 tablespoons unsalted butter
  • Dough: 1 3/4-2 1/4 cups all-purpose flour
  • 1/2 cup bread flour
  • 3 tablespoons granulated sugar
  • 1 packet (2 1/4 teaspoons) instant yeast (Fleischmann’s Rapid Rise recommended)
  • 1 teaspoon Kosher or sea salt
  • 1/3 cup whole milk
  • 3 tablespoons unsalted butter
  • 1/3 cup unsweetened pineapple juice (reserved from filling)
  • 2 large eggs, beaten, room temperature


Instructions

  1. Prepare the filling: In a medium saucepan, combine crushed pineapple, sugar, ground ginger, and cornstarch. Cook over medium heat until thickened, about 5-7 minutes. Stir in butter and set aside to cool.
  2. Prepare the dough: In a large bowl, mix all-purpose flour, bread flour, sugar, yeast, and salt.
  3. Warm milk slightly and melt butter. Add milk, butter, pineapple juice, and beaten eggs to the dry ingredients. Mix until a soft dough forms.
  4. Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise until doubled in size, about 1-1.5 hours.
  5. Roll dough into a rectangle. Spread cooled pineapple filling evenly over the dough.
  6. Roll dough tightly from the long side and cut into 8-12 rolls.
  7. Place rolls in a greased baking dish. Cover and let rise for 30-45 minutes until puffy.
  8. Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes until golden brown.
  9. Remove from oven and let cool slightly before serving. Optionally drizzle with icing or sprinkle with powdered sugar.

Notes

  • Reserve pineapple juice from the canned pineapple for added moisture in the dough.
  • Ensure the filling is cooled before spreading to prevent dough from becoming soggy.
  • These rolls can be made ahead and stored in an airtight container for 2-3 days.
