Description

A sunny, refreshing blend of sweet pineapple, creamy coconut, and cooling ice that tastes like a mini tropical vacation in a glass.


Ingredients

  • 2 cups pineapple chunks, fresh or frozen
  • 1 1/2 cups coconut water, chilled
  • 1/2 cup light coconut milk, chilled
  • 1 tablespoon maple syrup or agave, optional to taste
  • 1 cup ice cubes
  • Fresh mint leaves, for garnish
  • Pineapple wedges, for garnish


Instructions

  1. Make sure your blender is clean and ready, and chill your ingredients for the coldest, frothiest results.
  2. Add pineapple chunks, coconut water, light coconut milk, maple syrup or agave if using, and ice to the blender.
  3. Check your serving glasses and, if possible, chill them so the drink stays frosty longer.
  4. Blend on high until the mixture is silky and frothy, then taste and adjust sweetness as needed.
  5. Continue blending briefly until the texture is smooth and lump free.
  6. Pour into chilled glasses, then garnish with fresh mint and a pineapple wedge.
  7. Serve immediately and enjoy the tropical freshness.

Notes

  • For a thicker texture, use frozen pineapple and reduce the coconut water slightly.
  • If your pineapple is very ripe, you may not need any added sweetener.
