- 2 cups pineapple chunks, fresh or frozen
- 1 1/2 cups coconut water, chilled
- 1/2 cup light coconut milk, chilled
- 1 tablespoon maple syrup or agave, optional to taste
- 1 cup ice cubes
- Fresh mint leaves, for garnish
- Pineapple wedges, for garnish
Instructions
- Make sure your blender is clean and ready, and chill your ingredients for the coldest, frothiest results.
- Add pineapple chunks, coconut water, light coconut milk, maple syrup or agave if using, and ice to the blender.
- Check your serving glasses and, if possible, chill them so the drink stays frosty longer.
- Blend on high until the mixture is silky and frothy, then taste and adjust sweetness as needed.
- Continue blending briefly until the texture is smooth and lump free.
- Pour into chilled glasses, then garnish with fresh mint and a pineapple wedge.
- Serve immediately and enjoy the tropical freshness.
Notes
- For a thicker texture, use frozen pineapple and reduce the coconut water slightly.
- If your pineapple is very ripe, you may not need any added sweetener.
- A high speed blender will give the smoothest, most velvety finish.
