A vibrant and refreshing tropical drink, the Pineapple Citrus Mint Cooler blends juicy pineapple, fresh citrus, and mint into the perfect cooler for hot days or brunches.
Ingredients

- 2 cups fresh pineapple chunks
- 1/4 cup fresh lime juice (about 2 limes)
- 1/4 cup fresh lemon juice (about 1 lemon)
- 1/4 cup mint leaves, loosely packed
- 2 tablespoons honey or agave syrup
- 1 to 1 1/2 cups cold water or sparkling water
- 1 to 2 cups ice cubes
- Pineapple wedges and mint sprigs for garnish
Instructions
- Place blender jar and glasses in the fridge or freezer for a few minutes to chill.
- Add pineapple, lime juice, lemon juice, mint, honey or agave, and 1 cup of cold water to the blender. Blend until smooth.
- Optional: Strain the mixture through a fine mesh sieve into a pitcher for a smoother texture.
- Fill glasses or pitcher with ice cubes. Pour the blended cooler over the ice.
- If using sparkling water, stir it in gently at this stage.
- Garnish with pineapple wedges and mint sprigs.
- Serve immediately and enjoy!
