Description
These homemade lime marshmallows are airy, soft, and full of fresh citrus flavor. With a delicate balance of sweetness and tang, they melt in your mouth and are perfect for snacking, gifting, or floating on hot chocolate.

- 3 tablespoons unflavored gelatin
- 1 cup cold water, divided
- 2 cups granulated sugar
- 3/4 cup light corn syrup
- 1/4 teaspoon salt
- 1/4 cup fresh lime juice
- Zest from 1 lime
- 1 teaspoon vanilla extract
- Powdered sugar, for dusting
Instructions
- Lightly grease a 9×9 inch pan and line it with parchment paper. Dust with powdered sugar.
- In a stand mixer bowl, sprinkle gelatin over 1/2 cup cold water. Let bloom.
- In a saucepan, combine granulated sugar, corn syrup, salt, and remaining 1/2 cup water. Heat to 240°F using a candy thermometer.
- Slowly pour the hot syrup into the bloomed gelatin while mixing on low. Increase speed and whip for 10–12 minutes until thick and glossy. Add lime juice, zest, and vanilla in the last minute.
- Transfer mixture to prepared pan. Smooth with greased spatula.
- Let set at room temperature for 6 hours or overnight.
- Turn out onto a powdered sugar-dusted board. Cut into cubes and coat each piece with more powdered sugar.
- Store in an airtight container.
Notes
- Use a wet knife or greased scissors for easier cutting.
- Letting the marshmallows set overnight gives the best texture.
- Try other citrus fruits like lemon or orange for variation.
