- 100 g (scant ½ cup) Greek yogurt
- 120 ml (½ cup) tepid water
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 teaspoon active dry yeast
- 1 egg, lightly beaten for brushing
- Cheese Filling:
- 300 g (10 ½ oz) grated cheese, mix of mozzarella and cheddar
- 1 teaspoon mixed herbs
- 1 teaspoon garlic powder
- Drizzle of olive oil
- Optional Toppings:
- Pancetta, bacon, ham, or other cured meats
- Sliced peppers
- Cherry tomatoes
Instructions
- In a small bowl, dissolve sugar and yeast in tepid water and let it sit for 5-10 minutes until frothy.
- In a large bowl, combine flour, Greek yogurt, olive oil, salt, and yeast mixture. Knead until a soft, elastic dough forms.
- Cover dough and let it rise for 1 hour or until doubled in size.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Divide dough into 2-3 portions and roll each into an oval shape. Fold the edges inward to form a boat shape and pinch the ends.
- Mix grated cheeses with herbs and garlic powder. Fill the center of each dough boat with the cheese mixture and drizzle lightly with olive oil.
- Add optional toppings like pancetta, peppers, and cherry tomatoes as desired.
- Brush the edges of the dough with beaten egg.
- Bake for 18-22 minutes, or until the dough is golden brown and the cheese is melted and bubbly.
- Remove from oven, allow to cool slightly, and serve warm.
