- 1 large or 2 small flatbreads (like naan or lavash)
- 6 oz brie cheese, sliced
- 2 ripe pears, thinly sliced
- 1/3 cup dried cranberries
- 1 tablespoon fresh thyme
- 1 tablespoon olive oil
- 1 tablespoon honey
- Pinch of salt
- Freshly cracked black pepper, to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss pear slices in a bowl with a bit of olive oil and a pinch of salt.
- Place flatbreads on the baking sheet and brush lightly with olive oil.
- Layer with brie slices, pear slices, cranberries, and sprinkle with thyme and black pepper.
- Bake for 10–12 minutes, or until cheese is melted and crust is golden.
- Remove from oven, drizzle with honey, and optionally finish with flaky salt.
- Slice and serve warm.

- Use ripe but firm pears for best texture and flavor.
- Warm brie slightly before slicing to make it easier to work with.
