Description

Cozy baked oats swirled with creamy peanut butter and rich chocolate chips, perfect for a comforting breakfast or brunch treat.

Ingredients

Scale
  • 2 cups rolled oats
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 cup natural peanut butter
  • 1/4 cup maple syrup
  • 1 3/4 cups milk
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/3 cup dark chocolate chips
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F and lightly grease an 8×8 inch baking dish.
  2. In a large mixing bowl, whisk together the milk, egg, maple syrup, peanut butter, and vanilla extract until smooth.
  3. Stir in the rolled oats, cocoa powder, baking powder, salt, and dark chocolate chips until fully combined.
  4. Pour the mixture evenly into the greased baking dish and smooth the top with a spoon.
  5. Sprinkle a few extra chocolate chips on top and gently swirl a small spoonful of peanut butter over the surface for visual appeal.
  6. Bake for 25 to 30 minutes, until the center is just set and the edges are slightly firm.
  7. Remove from the oven and let it rest for 5 minutes to firm up slightly.
  8. Scoop into bowls and enjoy warm.

Notes

  • Use natural peanut butter that is well stirred for the smoothest texture.
  • Do not overbake to keep the center moist.
  • Extra chocolate chips on top create glossy, melted pockets.
  • Let it rest after baking for cleaner slices.
