Description
Cozy baked oats swirled with creamy peanut butter and rich chocolate chips, perfect for a comforting breakfast or brunch treat.
Ingredients
Scale
- 2 cups rolled oats
- 2 tablespoons unsweetened cocoa powder
- 1/2 cup natural peanut butter
- 1/4 cup maple syrup
- 1 3/4 cups milk
- 1 large egg
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/3 cup dark chocolate chips
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F and lightly grease an 8×8 inch baking dish.
- In a large mixing bowl, whisk together the milk, egg, maple syrup, peanut butter, and vanilla extract until smooth.
- Stir in the rolled oats, cocoa powder, baking powder, salt, and dark chocolate chips until fully combined.
- Pour the mixture evenly into the greased baking dish and smooth the top with a spoon.
- Sprinkle a few extra chocolate chips on top and gently swirl a small spoonful of peanut butter over the surface for visual appeal.
- Bake for 25 to 30 minutes, until the center is just set and the edges are slightly firm.
- Remove from the oven and let it rest for 5 minutes to firm up slightly.
- Scoop into bowls and enjoy warm.
Notes
- Use natural peanut butter that is well stirred for the smoothest texture.
- Do not overbake to keep the center moist.
- Extra chocolate chips on top create glossy, melted pockets.
- Let it rest after baking for cleaner slices.
