Ingredients
Scale
- 400g Pasta (Trofie or Fusilli)
- 200g Green Beans, trimmed and halved
- 2 Medium Potatoes, peeled and diced
- 60g Fresh Basil Leaves
- 30g Pine Nuts
- 50g Parmesan Cheese, grated
- 1 Garlic Clove, peeled
- 100ml Extra Virgin Olive Oil
- Salt to taste
- 2 tbsp Pasta Water
Instructions
- Fill a large pot with water, bring to a boil, and salt it generously.
- In a blender, combine basil, pine nuts, garlic, and parmesan. Blend while streaming in olive oil until smooth. Set aside.
- Dice potatoes and trim green beans. Add to boiling water and cook for 5–6 minutes.
- Add pasta to the pot with vegetables and cook until al dente. Reserve 2 tbsp of pasta water and drain.
- In a bowl, toss pasta, beans, and potatoes with pesto. Add pasta water to loosen the sauce as needed.
- Top with extra parmesan and a drizzle of olive oil. Season with black pepper if desired.
- Serve warm with crusty bread or salad.
Notes
- Use waxy potatoes like Yukon Gold for best texture.
- Don’t overcook green beans to keep their crunch.
- Toss pesto off the heat to keep its vibrant color.
- Homemade pesto tastes best, but store-bought works too.
