Description

Crispy breaded chicken baked with marinara sauce and melted mozzarella, finished with parmesan and fresh parsley for a comforting Italian inspired dinner.

  • 4 boneless skinless chicken fillets
  • 1 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup Italian seasoned breadcrumbs
  • 1 cup marinara sauce
  • 2 large eggs
  • 1/2 cup all purpose flour
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare three shallow bowls. Place flour in the first bowl, beaten eggs in the second bowl, and combine breadcrumbs with grated parmesan cheese in the third bowl.
  3. Season the chicken fillets with salt and black pepper.
  4. Dredge each chicken fillet in flour, dip into the eggs, then coat thoroughly in the breadcrumb and parmesan mixture, pressing gently so the coating sticks.
  5. Heat olive oil in a large skillet over medium heat.
  6. Cook the breaded chicken fillets for about 3 to 4 minutes per side until golden brown and crispy.
  7. Transfer the chicken to a baking dish.
  8. Spoon marinara sauce over each piece of chicken and sprinkle shredded mozzarella cheese on top.
  9. Bake for about 10 minutes until the cheese melts and becomes bubbly.
  10. Remove from the oven, sprinkle with minced garlic and chopped fresh parsley, then serve warm.
