- 4 chicken fillets, boneless and skinless
- 1 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 cups tomato sauce
- 2 large eggs
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- a small handful fresh basil leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 200°C.
- In one bowl, mix breadcrumbs with half of the parmesan cheese. In another bowl, whisk the eggs.
- Lightly grease a baking dish with olive oil.
- Coat each chicken fillet in flour, dip into eggs, then press into the breadcrumb mixture. Place in the baking dish.
- Spoon tomato sauce over each piece, then sprinkle mozzarella and remaining parmesan on top.
- Bake for 25 minutes until the chicken is cooked through and the cheese is bubbly and golden.
- Remove from the oven, add fresh basil, let it rest briefly, then serve.
Notes
- Use freshly grated cheese for better melting and flavor.
- Do not add too much sauce to keep the coating crispy.
- Let the dish rest before serving for better texture.
