- 4 cups shredded green cabbage
- 1 cup grated carrots
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 2 large eggs
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix shredded cabbage, carrots, onion, garlic, breadcrumbs, eggs, mozzarella cheese, salt, and pepper until well combined.
- Lightly oil the parchment paper to prevent sticking.
- Shape the mixture into palm-sized patties and arrange them evenly on the baking sheet.
- Bake for 20 minutes, then carefully flip the patties.
- Brush the tops with olive oil and bake for another 15 minutes until golden and crisp.
- Remove from oven and let rest briefly before serving.
Notes
- For firmer patties, chill the mixture for 10–15 minutes before shaping.
- You can freeze cooked patties for later use.
- Add smoked paprika or chopped herbs for extra flavor.
