  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/8 teaspoon salt
  • 1 1/2 cups fresh orange juice (about 4 oranges)
  • 1 tablespoon lemon juice
  • 1 tablespoon orange zest
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • 6 tablespoons granulated sugar (for meringue)

Instructions

  1. In a medium saucepan, whisk together sugar, cornstarch, and salt. Gradually whisk in orange juice and lemon juice until smooth.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and starts to bubble.
  3. In a separate bowl, beat egg yolks. Slowly whisk in a small amount of the hot orange mixture to temper the yolks, then gradually stir the yolks back into the saucepan.
  4. Continue to cook for 2–3 minutes, stirring constantly, until the filling is thick and glossy. Remove from heat and stir in orange zest and butter. Pour filling into the baked pie crust.
  5. Preheat oven to 350°F (175°C).
  6. In a clean mixing bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat until stiff, glossy peaks form.
  7. Spread meringue over the hot filling, sealing edges to the crust to prevent shrinking.
  8. Bake for 10–12 minutes, or until meringue is golden brown. Cool at room temperature, then chill for at least 2 hours before serving.
