  • 12 ounces dry pasta (penne or rotini)
  • 4 cups fresh spinach, packed
  • 1 can (14 ounces) artichoke hearts, drained and chopped
  • 3 garlic cloves, minced
  • 1 small yellow onion, finely diced
  • 4 cups vegetable broth
  • 4 ounces cream cheese
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper


Instructions

  1. Place a large pot or deep sauté pan over medium heat and let it warm.
  2. Add olive oil, diced onion, and garlic. Sauté for about 3 minutes until translucent and fragrant.
  3. Pour in dry pasta and vegetable broth. Stir and bring to a boil.
  4. Reduce to a simmer, cover, and cook for 10 to 12 minutes, stirring occasionally.
  5. Once pasta is tender, stir in chopped artichokes and cream cheese until melted and creamy.
  6. Add spinach and grated parmesan. Stir until spinach wilts and everything is combined.
  7. Let sit for 1 minute, then stir again and serve warm.
