- 2 tablespoons olive oil
- 4 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 2 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- ¼ teaspoon crushed red pepper flakes
- 20 ounces cheese tortellini (refrigerated)
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and pepper, to taste
Instructions
- Place a large skillet or sauté pan over medium heat and add olive oil.
- Add minced garlic and chopped sun-dried tomatoes. Sauté for 1 to 2 minutes until fragrant.
- Pour in chicken broth and heavy cream. Stir in Italian seasoning and red pepper flakes. Bring to a gentle simmer.
- Add tortellini and stir to coat with the sauce.
- Cover and simmer for 4 to 5 minutes until tortellini are tender. Stir in Parmesan and spinach. Let spinach wilt and cheese melt.
- Season with salt and pepper to taste. Stir until sauce thickens slightly.
- Serve hot with extra Parmesan and red pepper flakes if desired.
