Ingredients

  • 3 garlic cloves, minced
  • 2 large carrots, chopped
  • 2 celery stalks, sliced
  • 1 cup mushrooms, sliced
  • 1 tablespoon all-purpose flour
  • 3 cups vegetable broth
  • 1 cup frozen peas
  • Salt and black pepper to taste
  • 1 teaspoon fresh thyme
  • 1 cup all-purpose flour (for dumplings)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt (for dumplings)
  • 1/2 cup milk
  • 2 tablespoons butter, melted
  • Fresh parsley or chives for garnish


Instructions

  1. Preheat your oven to 375°F.
  2. Heat olive oil in an oven-safe pan over medium heat. Add onion, garlic, carrots, celery, and mushrooms. Cook until softened.
  3. Stir in 1 tablespoon flour, then add vegetable broth. Add peas, thyme, salt, and pepper. Simmer for 5 minutes.
  4. In a separate bowl, mix flour, baking powder, and salt. Stir in milk and melted butter until just combined.
  5. Drop spoonfuls of dumpling dough onto the simmering sauce.
  6. Cover with lid or foil and bake for 15 minutes. Uncover and bake for another 10 minutes until golden.
  7. Garnish with fresh herbs and serve hot.
