- 1 ½ cups orzo
- 12 oz chicken sausage, sliced
- 3 cups baby spinach, loosely packed
- ½ cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 small yellow onion, diced
- 3 cups chicken broth
- ½ cup heavy cream
- ½ cup grated parmesan cheese
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Set a large skillet over medium heat. Add olive oil and let it warm until shimmering.
- Add sliced sausage and cook until browned on both sides, about 5–6 minutes. Remove and set aside.
- In the same skillet, sauté diced onion until soft, then add minced garlic and cook for 30 seconds.
- Stir in dry orzo and toast for 1 minute. Pour in chicken broth and heavy cream, then bring to a simmer.
- Return sausage to the skillet. Cover and cook for 10–12 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
- Stir in spinach and sun-dried tomatoes until spinach wilts. Add parmesan cheese, salt, and pepper. Stir well.
- Serve hot, garnished with more parmesan if desired.
