  • Vegetable oil for frying


Instructions

  1. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  2. Dredge the shrimp in cornstarch until fully coated.
  3. Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
  4. In a separate saucepan, melt the butter over medium heat. Add chopped onion and sauté until translucent.
  5. Add white wine and white wine vinegar to the butter mixture, stirring to combine.
  6. Stir in heavy cream, salt, and white pepper. Simmer for 2-3 minutes until the sauce thickens slightly.
  7. Add lemon slices, parsley, and freshly squeezed lemon juice to the sauce.
  8. Toss the fried shrimp in the scampi sauce until evenly coated.
  9. Serve immediately, garnished with extra parsley or lemon slices if desired.
