- 2 cups cornstarch

- 1/3 cup heavy cream
- 1/4 teaspoon salt
- 1/8 teaspoon ground white pepper
- 5-6 lemon slices
- 1/2 teaspoon fresh parsley (or dried)
- 1 tablespoon freshly squeezed lemon juice
- Vegetable oil for frying
Instructions
- Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
- Dredge the shrimp in cornstarch until fully coated.
- Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
- In a separate saucepan, melt the butter over medium heat. Add chopped onion and sauté until translucent.
- Add white wine and white wine vinegar to the butter mixture, stirring to combine.
- Stir in heavy cream, salt, and white pepper. Simmer for 2-3 minutes until the sauce thickens slightly.
- Add lemon slices, parsley, and freshly squeezed lemon juice to the sauce.
- Toss the fried shrimp in the scampi sauce until evenly coated.
- Serve immediately, garnished with extra parsley or lemon slices if desired.
