Description

Wholesome, chewy, and fruity, these No Bake Blueberry Oat Bars are a breeze to make and perfect for any time of day. No oven required — just natural ingredients and a chill to set.


Ingredients

  • 2 cups Old-Fashioned Rolled Oats
  • 1 cup Almond Butter
  • 1/3 cup Honey or Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt
  • 2 cups Blueberries (fresh or frozen)
  • 1 tablespoon Chia Seeds
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Cornstarch or Arrowroot Powder


Instructions

  1. Line an 8×8 inch pan with parchment paper and set aside.
  2. In a large bowl, mix oats, almond butter, honey or maple syrup, vanilla extract, and salt until well combined.
  3. Press half of the oat mixture evenly into the bottom of the prepared pan.
  4. In a saucepan over medium heat, cook blueberries, lemon juice, and chia seeds until the berries burst and the mixture thickens, about 8–10 minutes.
  5. Stir in cornstarch and cook for another 2 minutes. Remove from heat and let cool slightly.
  6. Spread the blueberry filling over the oat base evenly.
  7. Top with the remaining oat mixture, pressing it gently over the blueberry layer.
  8. Refrigerate for at least 2 hours or freeze for 45 minutes until firm.
  9. Lift out using parchment, slice into bars, and enjoy chilled.
