- 2 cups Old-Fashioned Rolled Oats
- 1 cup Almond Butter
- 1/3 cup Honey or Maple Syrup
- 1 teaspoon Vanilla Extract
- 1/4 teaspoon Salt
- 2 cups Blueberries (fresh or frozen)
- 1 tablespoon Chia Seeds
- 1 tablespoon Lemon Juice
- 1 tablespoon Cornstarch or Arrowroot Powder
Instructions
- Line an 8×8 inch pan with parchment paper and set aside.
- In a large bowl, mix oats, almond butter, honey or maple syrup, vanilla extract, and salt until well combined.
- Press half of the oat mixture evenly into the bottom of the prepared pan.
- In a saucepan over medium heat, cook blueberries, lemon juice, and chia seeds until the berries burst and the mixture thickens, about 8–10 minutes.
- Stir in cornstarch and cook for another 2 minutes. Remove from heat and let cool slightly.
- Spread the blueberry filling over the oat base evenly.
- Top with the remaining oat mixture, pressing it gently over the blueberry layer.
- Refrigerate for at least 2 hours or freeze for 45 minutes until firm.
- Lift out using parchment, slice into bars, and enjoy chilled.

- Frozen berries may take longer to cook than fresh ones.
