Instructions

  1. Prepare the Potatoes: Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly and pierce each one with a fork a few times. Bake them in the preheated oven for about 45-60 minutes, until they are soft and fully cooked.
  2. Cook the Filling: While the potatoes are baking, heat a skillet over medium heat. Add the ground beef or turkey and cook until browned. Drain any excess fat. Stir in the taco seasoning and a splash of water, cooking for a few more minutes until well combined.
  3. Prepare the Potatoes for Stuffing: Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut each potato in half lengthwise and scoop out some of the insides, creating a small well for the filling.
  4. Stuff the Potatoes: Fill each potato half with the taco filling, pressing down gently to pack it in. Top with a generous amount of shredded cheese.
