- 400 grams firm tofu, cubed
- 1 large red bell pepper, chopped
- 1 large green bell pepper, chopped
- 1 medium zucchini, sliced
- 1 large red onion, cut into chunks
- 3 garlic cloves, minced
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your grill pan or oven to 200°C.
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, cumin, paprika, coriander, salt, and black pepper.
- Lightly oil a grill pan or line a baking tray with parchment paper.
- Thread tofu cubes, bell peppers, zucchini, and onion onto skewers, alternating ingredients evenly.
- Place skewers on the grill pan or tray and cook for 20 minutes, turning halfway through until golden and slightly charred.
- Remove from heat and sprinkle with chopped fresh parsley.
- Serve warm with rice, flatbread, or your favorite dip.

- Marinate for at least 30 minutes for deeper taste.
- Cut vegetables evenly to ensure consistent cooking.
