Description

Smoky, flavorful Middle Eastern tofu kebabs with vibrant vegetables and warm spices, grilled to perfection and perfect for a healthy plant-based meal.


Ingredients

  • 400 grams firm tofu, cubed
  • 1 large red bell pepper, chopped
  • 1 large green bell pepper, chopped
  • 1 medium zucchini, sliced
  • 1 large red onion, cut into chunks
  • 3 garlic cloves, minced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat your grill pan or oven to 200°C.
  2. In a mixing bowl, combine olive oil, lemon juice, minced garlic, cumin, paprika, coriander, salt, and black pepper.
  3. Lightly oil a grill pan or line a baking tray with parchment paper.
  4. Thread tofu cubes, bell peppers, zucchini, and onion onto skewers, alternating ingredients evenly.
  5. Place skewers on the grill pan or tray and cook for 20 minutes, turning halfway through until golden and slightly charred.
  6. Remove from heat and sprinkle with chopped fresh parsley.
  7. Serve warm with rice, flatbread, or your favorite dip.
