- 1 cup melon seeds (raw or toasted)
- 3 to 4 cups filtered water
- 2 dates, pitted (optional)
- 1 teaspoon vanilla extract (optional)
- Pinch of salt (optional)
Instructions
- Toast the melon seeds in a dry skillet over medium heat for 3 to 5 minutes until fragrant. Let them cool.
- Place the seeds in a bowl and soak them in water overnight or for at least 8 hours.
- Drain and rinse the soaked seeds, then add them to a blender along with 3 to 4 cups of filtered water, dates, vanilla, and salt if using.
- Blend on high for 1 to 2 minutes until smooth and creamy.
- Strain the mixture through a fine mesh sieve or nut milk bag into a large bowl, squeezing out as much liquid as possible.
- Transfer the milk to a glass jar or bottle and refrigerate. Shake well before each use.
Notes
- For richer flavor, always toast the seeds lightly before soaking.
- The milk can be stored in the fridge for up to 4 days.
- Use the leftover pulp in baking, smoothies, or oatmeal.
