Description

A vibrant and comforting dish of golden pan-seared gnocchi tossed with cherry tomatoes, olives, spinach, and crumbled feta. Bursting with Mediterranean flavors and ready in under 30 minutes.


Ingredients

Scale
  • 1 pound gnocchi
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup Kalamata olives, pitted and halved
  • 2 cups baby spinach
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste


Instructions

  1. Heat a large non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  2. Add the gnocchi directly to the pan and cook until golden and crispy, about 6 to 8 minutes. Stir occasionally.
  3. Remove gnocchi from skillet and set aside. Add remaining olive oil and red onion to the pan. Sauté for 2 minutes.
  4. Add garlic and cherry tomatoes. Cook for 3 to 4 minutes until tomatoes begin to burst.
  5. Return gnocchi to the skillet with olives and spinach. Toss until spinach wilts.
  6. Squeeze in lemon juice, season with salt and pepper, and stir gently.
  7. Top with crumbled feta and serve immediately.

  • Use a quality olive oil for best flavor.
  • Don’t overcrowd the pan to keep the gnocchi crispy.
  • Add chili flakes for a spicy kick or fresh basil for extra aroma.
