Description

Flaky baked cod infused with bright Mediterranean flavors, roasted with cherry tomatoes, olives, onions, and a zesty garlic lemon topping.


Ingredients

Scale
  • 4 cod fillets (6 oz each)
  • 1 ½ cups cherry tomatoes
  • ½ cup kalamata olives, pitted
  • 1 small red onion, thinly sliced
  • 3 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • Zest and juice of 1 lemon
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine cherry tomatoes, red onions, olives, half the parsley, oregano, and 1 tablespoon olive oil. Season with salt and pepper.
  3. Spread the mixture evenly in a baking dish.
  4. Place cod fillets on top of the vegetables.
  5. In a separate bowl, mix garlic, lemon zest, remaining parsley, 2 tablespoons olive oil, and a pinch of salt. Spoon over the cod fillets.
  6. Drizzle lemon juice over everything in the dish.
  7. Bake for 15 to 18 minutes, until the cod flakes easily with a fork.
  8. Let rest for 5 minutes before serving. Garnish with extra parsley and a drizzle of olive oil if desired.

Notes

  • Use fresh cod for best flavor and texture.
  • Add red chili flakes if you prefer a spicy kick.
  • Swap cod with haddock or halibut for variation.
