Ingredients

- 4 cod fillets (6 oz each)
- 1 ½ cups cherry tomatoes
- ½ cup kalamata olives, pitted
- 1 small red onion, thinly sliced
- 3 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- Zest and juice of 1 lemon
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine cherry tomatoes, red onions, olives, half the parsley, oregano, and 1 tablespoon olive oil. Season with salt and pepper.
- Spread the mixture evenly in a baking dish.
- Place cod fillets on top of the vegetables.
- In a separate bowl, mix garlic, lemon zest, remaining parsley, 2 tablespoons olive oil, and a pinch of salt. Spoon over the cod fillets.
- Drizzle lemon juice over everything in the dish.
- Bake for 15 to 18 minutes, until the cod flakes easily with a fork.
- Let rest for 5 minutes before serving. Garnish with extra parsley and a drizzle of olive oil if desired.
Notes
- Use fresh cod for best flavor and texture.
- Add red chili flakes if you prefer a spicy kick.
- Swap cod with haddock or halibut for variation.
