Description

Juicy pork meatballs simmered in a rich sun-dried tomato cream sauce. A comforting and romantic dinner idea that’s full of flavor and ready in under an hour.

Ingredients

Scale
  • 1 pound ground pork
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 tablespoons chopped fresh basil
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat Your Equipment: Heat a large skillet over medium heat and drizzle in the olive oil.
  2. Combine Ingredients: In a mixing bowl, combine ground pork, garlic, Parmesan, breadcrumbs, egg, salt, pepper, and Italian seasoning. Mix gently until just combined. Form into meatballs about 1 1/2 inches wide.
  3. Prepare Your Cooking Vessel: Once the oil is hot, add the meatballs in batches, searing until browned on all sides (about 2–3 minutes per side). Remove and set aside.
  4. Assemble the Dish: In the same skillet, lower heat and add sun-dried tomatoes. Sauté for 1–2 minutes. Pour in chicken broth and scrape up any bits from the pan, then stir in heavy cream.
  5. Cook to Perfection: Return meatballs to skillet. Simmer everything together for 10–12 minutes until meatballs are fully cooked and the sauce thickens.
  6. Finishing Touches: Sprinkle in chopped basil and stir to blend the fresh flavor into the sauce.
  7. Serve and Enjoy: Spoon over pasta, rice, or crusty bread. Garnish with more Parmesan and extra basil if you’d like.

Notes

  • Don’t overmix the meat mixture to keep the meatballs tender.
  • Let meatballs rest in the fridge before cooking to help hold their shape.
  • Add pasta water if the sauce thickens too much while simmering.
