- 1/2 cup grated Parmesan cheese
- 1/3 cup breadcrumbs
- 1 large egg

- 2 tablespoons olive oil
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 2 tablespoons chopped fresh basil
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat Your Equipment: Heat a large skillet over medium heat and drizzle in the olive oil.
- Combine Ingredients: In a mixing bowl, combine ground pork, garlic, Parmesan, breadcrumbs, egg, salt, pepper, and Italian seasoning. Mix gently until just combined. Form into meatballs about 1 1/2 inches wide.
- Prepare Your Cooking Vessel: Once the oil is hot, add the meatballs in batches, searing until browned on all sides (about 2–3 minutes per side). Remove and set aside.
- Assemble the Dish: In the same skillet, lower heat and add sun-dried tomatoes. Sauté for 1–2 minutes. Pour in chicken broth and scrape up any bits from the pan, then stir in heavy cream.
- Cook to Perfection: Return meatballs to skillet. Simmer everything together for 10–12 minutes until meatballs are fully cooked and the sauce thickens.
- Finishing Touches: Sprinkle in chopped basil and stir to blend the fresh flavor into the sauce.
- Serve and Enjoy: Spoon over pasta, rice, or crusty bread. Garnish with more Parmesan and extra basil if you’d like.
