Description

A creamy and comforting low carb chicken casserole made with tender chicken pieces, cauliflower, rich cheese, and a smooth savory sauce baked until golden and bubbly.


Ingredients

  • 1.5 pounds chicken pieces, cut into bite sized pieces
  • 3 cups cauliflower florets
  • 1.5 cups shredded cheddar cheese
  • 8 ounces cream cheese
  • 0.5 cup heavy cream
  • 3 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley


Instructions

  1. Preheat the oven to 375°F and lightly grease a casserole baking dish.
  2. In a mixing bowl, combine cream cheese, heavy cream, salt, black pepper, paprika, and dried parsley, stirring until smooth.
  3. Heat olive oil in a skillet over medium heat, then sauté the onion and garlic until soft and fragrant.
  4. Add the chicken pieces and cauliflower to the skillet and cook for 3 to 4 minutes, stirring gently.
  5. Transfer the chicken and cauliflower mixture to the prepared baking dish.
  6. Pour the creamy mixture evenly over the contents of the dish and stir lightly to coat.
  7. Sprinkle shredded cheddar cheese evenly over the top.
  8. Bake for 30 to 35 minutes until the casserole is bubbly and lightly golden.
