- 1.5 to 2 kg whole chicken
- 2 fresh lemons, sliced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 5 garlic cloves, crushed
- 3 tablespoons olive oil
- 1.5 teaspoons salt
- 1 teaspoon black pepper
Instructions
- Preheat your oven to 200°C and prepare a roasting pan.
- In a bowl, mix olive oil, garlic, salt, black pepper, rosemary, and thyme.
- Pat the chicken dry and place it in the roasting pan.
- Rub the mixture all over the chicken and stuff the cavity with lemon slices.
- Roast for 1 hour and 20 minutes, basting occasionally.
- Remove from oven and let it rest for 10 minutes.
- Carve and serve warm with your favorite sides.
