Description

A comforting roasted chicken infused with fresh lemon, garlic, and herbs, delivering crispy skin and juicy, flavorful meat in every bite.


Ingredients

  • 1.5 to 2 kg whole chicken
  • 2 fresh lemons, sliced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 5 garlic cloves, crushed
  • 3 tablespoons olive oil
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper


Instructions

  1. Preheat your oven to 200°C and prepare a roasting pan.
  2. In a bowl, mix olive oil, garlic, salt, black pepper, rosemary, and thyme.
  3. Pat the chicken dry and place it in the roasting pan.
  4. Rub the mixture all over the chicken and stuff the cavity with lemon slices.
  5. Roast for 1 hour and 20 minutes, basting occasionally.
  6. Remove from oven and let it rest for 10 minutes.
  7. Carve and serve warm with your favorite sides.
