These Leftover Turkey Crescent Rolls are the perfect way to transform holiday leftovers into a fun, handheld comfort food. Flaky crescent dough is stuffed with turkey, stuffing, mashed potatoes, and cranberry sauce, then brushed with buttery herb topping for a golden, irresistible finish.

- 8 ounces crescent roll dough
- ½ cup prepared mashed potatoes
- ½ pound cooked turkey, shredded or chopped
- 1 cup prepared stuffing
- ½ cup prepared cranberry sauce, plus more for dipping
- 2 tablespoons salted butter, melted
- 1 teaspoon poppy seeds
- ½ teaspoon dried parsley
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Unroll crescent dough and separate into triangles.
- Spread a small spoonful of mashed potatoes onto the wide end of each triangle.
- Top with turkey, stuffing, and a little cranberry sauce.
- Roll up each crescent from the wide end to the tip, tucking in the sides if needed to keep filling inside.
- Place rolls on prepared baking sheet, seam side down.
- Brush tops with melted butter and sprinkle with poppy seeds and parsley.
- Bake 12–15 minutes, or until golden brown.
- Serve warm with extra cranberry sauce for dipping.
Notes
- For a cheesy twist, add a sprinkle of shredded cheddar or Swiss before rolling.
- These are best eaten fresh but can be reheated in the oven to crisp them back up.
