- 1 lb (450g) ground beef
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 cup sliced mushrooms
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- 1/2 cup beef broth
- 1/2 cup sour cream
- 1 lb (450g) green beans, trimmed
- 1 tablespoon Worcestershire sauce (optional, check for keto-friendly version)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add chopped onion and cook until soft, about 4–5 minutes.
- Add garlic and sliced mushrooms. Cook for another 5 minutes until mushrooms are browned.
- Add ground beef, breaking it apart with a spatula. Cook until fully browned and no longer pink. Drain excess fat if needed.
- Season with smoked paprika, salt, and pepper. Stir in the beef broth and Worcestershire sauce (if using). Simmer for 5 minutes.
- While the beef is simmering, steam or boil the green beans until tender-crisp, about 5–6 minutes. Drain and set aside.
- Reduce the heat to low and stir sour cream into the beef mixture. Mix well and cook gently for 2–3 minutes. Do not boil.
- Add the green beans into the skillet and toss to coat evenly with the sauce.
- Garnish with chopped parsley and serve warm.
Notes
- For extra richness, add a tablespoon of cream cheese with the sour cream.
- You can substitute ground beef with ground turkey or pork.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Serve with cauliflower mash or a simple keto salad.
