  • 1 lb (450g) ground beef
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 cup sliced mushrooms
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1/2 cup beef broth
  • 1/2 cup sour cream
  • 1 lb (450g) green beans, trimmed
  • 1 tablespoon Worcestershire sauce (optional, check for keto-friendly version)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add chopped onion and cook until soft, about 4–5 minutes.
  2. Add garlic and sliced mushrooms. Cook for another 5 minutes until mushrooms are browned.
  3. Add ground beef, breaking it apart with a spatula. Cook until fully browned and no longer pink. Drain excess fat if needed.
  4. Season with smoked paprika, salt, and pepper. Stir in the beef broth and Worcestershire sauce (if using). Simmer for 5 minutes.
  5. While the beef is simmering, steam or boil the green beans until tender-crisp, about 5–6 minutes. Drain and set aside.
  6. Reduce the heat to low and stir sour cream into the beef mixture. Mix well and cook gently for 2–3 minutes. Do not boil.
  7. Add the green beans into the skillet and toss to coat evenly with the sauce.
  8. Garnish with chopped parsley and serve warm.

  • For extra richness, add a tablespoon of cream cheese with the sour cream.
  • You can substitute ground beef with ground turkey or pork.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
