Description

A rich and creamy low carb soup that captures all the classic cheeseburger flavors in a warm, comforting bowl. Made with ground beef, cheddar, cream cheese, and tender zucchini, this hearty dish is perfect for an easy keto-friendly dinner.

Ingredients

Scale
  • 1 pound ground beef
  • 1 ½ cups shredded cheddar cheese
  • 4 ounces cream cheese
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 medium zucchini, diced
  • ½ medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper

Instructions

  1. Heat a large soup pot over medium heat.
  2. Add olive oil and butter, then brown the ground beef until fully cooked and golden. Season lightly with salt and pepper.
  3. Stir in diced onion and minced garlic, cooking until softened and fragrant.
  4. Add beef broth and diced zucchini. Bring to a gentle simmer and cook until zucchini is tender.
  5. Lower the heat and stir in cream cheese and heavy cream until smooth.
  6. Gradually add shredded cheddar cheese, stirring until fully melted and creamy.
  7. Taste and adjust seasoning with additional salt and pepper if needed. Serve warm.

Notes

  • Keep heat low when adding dairy to maintain a smooth texture.
  • Shred your own cheese for better melting and creaminess.
  • If the soup thickens too much, add a splash of beef broth when reheating.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
