Description
Hot Honey Chicken Sliders are juicy fried chicken pieces coated in a spicy-sweet hot honey sauce, served on soft brioche or Hawaiian slider buns with pickles and optional garlic parsley butter. Perfect for game day, parties, or a fun dinner.

- 1.5 lbs chicken breasts, cut into 4″ pieces (chicken tenderloins also work)
- 12 brioche or Hawaiian slider buns
- 3 tablespoons butter, melted
- Sweet heat pickles, about 2 per slider
- Ranch dressing, for serving
- Oil for frying (enough to come up 4” on the pan)
- Wet Batter:
- 1 egg
- 1 cup buttermilk
- 2 teaspoons hot sauce
- 1/3 cup dill pickle juice
- 1 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 3/4 cup flour
- Dry Flour Mixture:
- 1 1/2 cups flour
- 1.5 teaspoons salt
- 1 tablespoon paprika
- 1 tablespoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- Hot Honey:
- 2/3 cup honey
- 1/4 cup ketchup
- 1/4 cup water + 2 teaspoons cornstarch (mixed as a slurry)
- 2 tablespoons hot sauce (Louisiana or Texas Pete’s)
- 2 tablespoons apple cider vinegar
- 1 teaspoon red pepper flakes
- Garlic Parsley Butter Topping (optional):
- 3 tablespoons butter
- 2-3 cloves garlic, minced
- 1 tablespoon fresh parsley, minced
Instructions
- Prepare the wet batter by whisking together egg, buttermilk, hot sauce, dill pickle juice, salt, pepper, garlic powder, paprika, and 3/4 cup flour in a bowl.
- In a separate bowl, mix the dry flour mixture: 1 1/2 cups flour, salt, paprika, onion powder, garlic powder, and black pepper.
- Dip chicken pieces into the wet batter, then dredge in the dry flour mixture to coat completely.
- Heat oil in a deep pan or skillet to 350°F (175°C). Fry chicken pieces in batches until golden brown and cooked through, about 6-8 minutes per batch. Drain on paper towels.
- For the hot honey sauce, combine honey, ketchup, cornstarch slurry, hot sauce, apple cider vinegar, and red pepper flakes in a small saucepan. Cook over medium heat until thickened, stirring frequently.
- Toss fried chicken in the hot honey sauce until evenly coated.
- Optionally, melt butter with garlic and parsley to brush on slider buns.
- Assemble sliders by placing hot honey chicken on buns, adding sweet heat pickles, and drizzling with ranch if desired. Top with the other half of the bun and serve immediately.
Notes
- Chicken can be marinated in buttermilk and hot sauce for 30 minutes to enhance flavor and tenderness.
- Adjust the amount of hot sauce and red pepper flakes for desired spiciness.
- Ensure oil is hot enough before frying to prevent greasy chicken.
- Use fresh parsley in the butter topping for a bright, fresh flavor.
