- 1.5 pounds chicken thighs, boneless and skinless
- 4 hoagie rolls
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 yellow onion, thinly sliced
- 1 cup shredded mozzarella cheese
- 4 slices provolone cheese
- 1/4 cup hot honey
- 1/4 cup mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C) if you want toasted sandwiches, and heat a large skillet over medium-high heat.
- In a bowl, mix the chicken thighs with olive oil, garlic powder, smoked paprika, salt, and black pepper.
- Cook the seasoned chicken in the skillet for 6–8 minutes until browned and cooked through. Remove and slice thinly.
- In the same skillet, sauté the bell peppers and onion for 8–10 minutes until soft and caramelized. Return sliced chicken to the pan and mix.
- Lay provolone cheese over the hot mixture. Let it melt, then scoop into lightly toasted hoagie rolls. Add mozzarella cheese and drizzle hot honey.
- Spread mayo inside the top bun, then close the sandwich. Bake in the oven for 5 minutes for extra meltiness if desired.
- Slice and serve hot.
Notes
- Toast the rolls to keep them from getting soggy.
- Swap hot honey with a mix of regular honey and chili flakes if needed.
- Use shredded rotisserie chicken for a quick version.
