Description
A homemade version of the famous McGriddle sandwich featuring fluffy pancakes sandwiching a savory egg, cheese, and crispy bacon or sausage.

- For the pancakes:
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- For the filling:
- 2 large eggs
- 4 slices cooked bacon or sausage patties
- 2 slices American cheese
- Butter or oil for cooking eggs
Instructions
- In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix buttermilk, egg, and melted butter.
- Combine wet and dry ingredients until just mixed; do not overmix.
- Heat a non-stick skillet over medium heat and lightly grease.
- Pour small rounds of pancake batter (about 3 inches in diameter) and cook until bubbles form on the surface, then flip and cook until golden brown. Repeat for 8 pancakes.
- In another skillet, heat butter or oil and cook eggs sunny side up or as desired.
- To assemble, place a slice of cheese on one pancake, top with cooked egg and bacon or sausage, then cover with another pancake to form a sandwich.
- Serve warm and enjoy!
