- 2 ½ cups all-purpose flour
- 1 stick unsalted butter (cold and cubed)
- 1 teaspoon salt
- ½ cup cold water
- 1 pound ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- ½ teaspoon cumin
- Salt and pepper to taste
- 1 hard-boiled egg, chopped
- ¼ cup green olives, chopped
- 1 egg, beaten (for egg wash)
Instructions
- Preheat oven to 375°F and line a baking sheet with parchment paper.
- In a bowl, mix flour and salt. Cut in butter until crumbly. Gradually add cold water to form dough. Chill for 30 minutes.
- In a skillet, sauté onion and garlic. Add ground beef and cook until browned. Season with paprika, cumin, salt, and pepper. Stir in chopped egg and olives. Let cool.
- Roll out chilled dough and cut into 4–5 inch circles. Spoon filling onto one side, fold over, and seal edges with a fork.
- Place empanadas on baking sheet. Brush tops with beaten egg.
- Bake for 25–30 minutes until golden brown. Let cool slightly before serving.
Notes
- Keep butter and water cold for flakier dough.
- Let the filling cool before assembling to avoid soggy dough.
- Brush with egg wash for a glossy, golden finish.
