Description

A comforting and nourishing vegetable soup filled with tender carrots, potatoes, zucchini, green beans, and herbs simmered in a light flavorful broth. This wholesome bowl is simple, satisfying, and perfect for cozy meals.

Ingredients

Scale
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 2 medium potatoes, diced
  • 1 medium zucchini, chopped
  • 1 cup green beans, trimmed and cut
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your equipment by placing a large soup pot over medium heat and adding the olive oil.
  2. Combine ingredients by adding the diced onion and minced garlic to the pot. Cook for about 3 minutes until fragrant and slightly softened.
  3. Prepare your cooking vessel by stirring in the carrots, celery, and potatoes so they begin to absorb the aromatic oil.
  4. Assemble the dish by pouring in the vegetable broth and adding zucchini, green beans, dried thyme, salt, and black pepper.
  5. Cook to perfection by bringing the soup to a gentle boil, then reduce the heat and simmer for 20 minutes until the vegetables are tender.
  6. Finishing touches include stirring in the fresh parsley and tasting the broth to adjust seasoning if needed.
  7. Serve and enjoy by ladling the soup into bowls while hot and fragrant.

Notes

  • For extra brightness, add a small squeeze of lemon juice before serving.
  • The soup tastes even better the next day as the flavors continue to develop.
  • If the soup becomes too thick during storage, add a splash of vegetable broth when reheating.
