Description
Juicy grilled chicken thighs with crispy golden skin, bright lemon, garlic, and herbs. Simple ingredients create a flavorful dish that is tender inside and lightly charred outside.
Ingredients
Scale
- 6 bone in skin on chicken thighs
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1 whole lemon, juiced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your grill or grill pan to medium heat so the chicken cooks evenly.
- In a mixing bowl combine olive oil, minced garlic, lemon juice, paprika, dried oregano, salt, and black pepper.
- Lightly oil the grill grates or pan to prevent sticking.
- Coat the chicken thighs evenly with the marinade and allow them to sit for about 15 minutes.
- Place the chicken thighs skin side down on the grill and cook for about 7 minutes.
- Flip the chicken and cook another 7 to 8 minutes until the internal temperature reaches 75°C.
- Remove from heat and let the chicken rest for about 5 minutes before serving.
Notes
- Allow the chicken to sit at room temperature for 15 minutes before grilling for more even cooking.
- Pat the skin dry before seasoning if you want extra crispy skin.
- A meat thermometer helps avoid overcooking while keeping the chicken juicy.
- Marinating the chicken longer will deepen the flavor.
