  • 6 bone in skin on chicken thighs
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 whole lemon, juiced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat your grill or grill pan to medium heat so the chicken cooks evenly.
  2. In a mixing bowl combine olive oil, minced garlic, lemon juice, paprika, dried oregano, salt, and black pepper.
  3. Lightly oil the grill grates or pan to prevent sticking.
  4. Coat the chicken thighs evenly with the marinade and allow them to sit for about 15 minutes.
  5. Place the chicken thighs skin side down on the grill and cook for about 7 minutes.
  6. Flip the chicken and cook another 7 to 8 minutes until the internal temperature reaches 75°C.
  7. Remove from heat and let the chicken rest for about 5 minutes before serving.

  • Allow the chicken to sit at room temperature for 15 minutes before grilling for more even cooking.
  • Pat the skin dry before seasoning if you want extra crispy skin.
