Description

Grilled Chicken Salad is a revitalizing dish featuring juicy grilled chicken and a medley of fresh vegetables, perfect for a light lunch or hearty dinner. Packed with protein and vibrant colors, it’s a healthy choice that satisfies without sacrificing taste.

Ingredients

Scale

Chicken Breast

  • 2 pieces, boneless and skinless

Mixed Greens

  • 4 cups, a mix of spinach, arugula, and romaine

Cherry Tomatoes

  • 1 cup, halved

Cucumbers

  • 1 cup, diced

Red Onion

  • 1/4 cup, thinly sliced

Avocado

  • 1, sliced

Olive Oil

  • 2 tablespoons, for marinating and dressing

Lemon Juice

  • 2 tablespoons, freshly squeezed

Instructions

  1. Marinate the Chicken

Start by marinating the chicken breasts in olive oil, lemon juice, salt, and pepper for at least 15 minutes. This step is crucial as it infuses the chicken with flavor and ensures it stays tender during grilling.

  2. Grill the Chicken

Preheat your grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove the chicken and let it rest before slicing.

  3. Prepare the Vegetables

While the chicken is grilling, wash and chop your mixed greens, cherry tomatoes, cucumbers, and red onion. Cut the avocado in half, remove the pit, and slice it just before serving to keep it fresh.

  4. Assemble the Salad

In a large bowl, combine the mixed greens, grilled chicken (sliced), cherry tomatoes, cucumbers, red onion, and avocado. Toss gently to mix the ingredients together without smashing the avocado.

  5. Dress the Salad

Drizzle your salad with olive oil and freshly squeezed lemon juice. Toss to coat everything evenly. You can also add salt and pepper to taste, depending on your preference.

Notes

  • Let the Chicken Rest: Allowing the grilled chicken to rest before slicing helps retain its juices, making it more flavorful.
  • Use a Grill Pan: If you don’t have an outdoor grill, a grill pan on the stovetop works beautifully too.
  • Fresh Ingredients Matter: Always choose the freshest vegetables and herbs for the best flavor.
  • Make Your Dressing: Homemade dressings are easy to make and can be tailored to your taste, enhancing the flavor profile.
  • Chill Before Serving: For an even more refreshing experience, chill your salad in the fridge for a few minutes before serving.
