Description

Ingredients

  • 1.5 pounds boneless skinless chicken thighs (about 6 to 8 thighs)
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice (from about 1 large lemon)
  • 3 garlic cloves, minced
  • 2 teaspoons dried oregano
  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat grill or grill pan to medium high heat, about 400 degrees Fahrenheit.
  2. In a mixing bowl, whisk together olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and black pepper.
  3. Add the chicken thighs and toss to coat evenly. Cover and marinate for at least 30 minutes.
  4. Lightly oil the grill grates to prevent sticking.
  5. Remove the chicken from the marinade, allowing excess to drip off.
  6. Grill the chicken for 5 to 7 minutes per side, until the internal temperature reaches 165 degrees Fahrenheit and the outside is golden with light char marks.
  7. In a small bowl, stir together Greek yogurt and chopped parsley for the sauce.
  8. Let the chicken rest for 5 minutes before serving, then serve warm with yogurt sauce and lemon wedges if desired.
