- 1 cup plain Greek yogurt
- 2 tablespoons fresh parsley, finely chopped

Instructions
- Preheat grill or grill pan to medium high heat, about 400 degrees Fahrenheit.
- In a mixing bowl, whisk together olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and black pepper.
- Add the chicken thighs and toss to coat evenly. Cover and marinate for at least 30 minutes.

- Remove the chicken from the marinade, allowing excess to drip off.
- Grill the chicken for 5 to 7 minutes per side, until the internal temperature reaches 165 degrees Fahrenheit and the outside is golden with light char marks.
- In a small bowl, stir together Greek yogurt and chopped parsley for the sauce.
- Let the chicken rest for 5 minutes before serving, then serve warm with yogurt sauce and lemon wedges if desired.
