Ingredients

  • 1 cup dried chickpeas (or 2 cans chickpeas, drained and rinsed)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 6 cups vegetable or chicken broth
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil
  • Juice of 1 large lemon (about 3 tablespoons)
  • Salt and pepper to taste
  • Fresh parsley or dill for garnish

Instructions

  1. If using dried chickpeas, soak them overnight and cook until tender, about 1 hour. Drain and set aside.
  2. In a large pot, heat olive oil over medium heat. Sauté onion, garlic, carrots, and celery until softened, about 5–7 minutes.
  3. Add cooked or canned chickpeas, broth, and oregano. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Season with salt and pepper. Remove from heat and stir in lemon juice.
  5. Serve hot, garnished with fresh parsley or dill.

Notes

  • Add a pinch of crushed red pepper for heat if desired.
