Juicy shrimp coated in garlic, parmesan, and herbs, grilled to crispy perfection on skewers. This quick and flavorful dish is perfect for gatherings or weeknight dinners.

- 1 pound raw shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 3 tablespoons olive oil
- 1 tablespoon lemon juice, freshly squeezed
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat grill or grill pan to medium-high heat. Soak wooden skewers in water for 30 minutes if using.
- In a large bowl, whisk together olive oil, lemon juice, garlic, salt, pepper, and half of the grated parmesan.
- Lightly oil the grill grates or grill pan to prevent sticking.
- Thread shrimp onto skewers and brush with the garlic-parmesan mixture. Set aside the remaining parmesan.
- Grill the skewers for 2 to 3 minutes per side until shrimp are opaque and slightly charred. Brush with garlic butter and sprinkle remaining parmesan during the last minute.
- Remove from heat and sprinkle with chopped parsley and a squeeze of lemon.
- Serve hot with lemon wedges.
Notes
- Use fresh, large shrimp for best results.
- Substitute parsley with basil or cilantro for a different twist.
- Serve over pasta or rice for a complete meal.
