Garlic Parmesan Shrimp Skewers

Description

Juicy shrimp coated in garlic, parmesan, and herbs, grilled to crispy perfection on skewers. This quick and flavorful dish is perfect for gatherings or weeknight dinners.


Ingredients

  • 1 pound raw shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice, freshly squeezed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat grill or grill pan to medium-high heat. Soak wooden skewers in water for 30 minutes if using.
  2. In a large bowl, whisk together olive oil, lemon juice, garlic, salt, pepper, and half of the grated parmesan.
  3. Lightly oil the grill grates or grill pan to prevent sticking.
  4. Thread shrimp onto skewers and brush with the garlic-parmesan mixture. Set aside the remaining parmesan.
  5. Grill the skewers for 2 to 3 minutes per side until shrimp are opaque and slightly charred. Brush with garlic butter and sprinkle remaining parmesan during the last minute.
  6. Remove from heat and sprinkle with chopped parsley and a squeeze of lemon.
  7. Serve hot with lemon wedges.

  • Use fresh, large shrimp for best results.
  • Substitute parsley with basil or cilantro for a different twist.
  • Serve over pasta or rice for a complete meal.
