- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the baby potatoes with olive oil, salt, black pepper, and Italian seasoning until evenly coated.
- In a separate bowl, combine melted butter and minced garlic. Brush the mixture evenly over the chicken pieces, then sprinkle parmesan cheese over the top.
- Lightly grease a large baking sheet or roasting pan.
- Arrange the seasoned potatoes on one side of the pan and place the chicken pieces on the other side, leaving space between them.
- Roast for 30 to 35 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are golden and crispy.
- Remove from oven and sprinkle with fresh chopped parsley before serving.
- Let the chicken rest for 5 minutes, then serve warm.
