Ingredients

  • 4 boneless skinless chicken pieces (about 1.5 pounds)
  • 1.5 pounds baby potatoes, halved if large
  • 4 cloves fresh garlic, minced
  • 1/2 cup freshly grated parmesan cheese
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the baby potatoes with olive oil, salt, black pepper, and Italian seasoning until evenly coated.
  3. In a separate bowl, combine melted butter and minced garlic. Brush the mixture evenly over the chicken pieces, then sprinkle parmesan cheese over the top.
  4. Lightly grease a large baking sheet or roasting pan.
  5. Arrange the seasoned potatoes on one side of the pan and place the chicken pieces on the other side, leaving space between them.
  6. Roast for 30 to 35 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are golden and crispy.
  7. Remove from oven and sprinkle with fresh chopped parsley before serving.
  8. Let the chicken rest for 5 minutes, then serve warm.
