Description

A bold and comforting pasta dish featuring spaghetti tossed with garlic, parmesan, toasted breadcrumbs, and smoky chipotle flakes. Perfectly spicy, crunchy, and rich all at once.


Ingredients

  • 12 ounces spaghetti
  • 5 tablespoons olive oil
  • 6 cloves garlic, finely minced
  • 1 cup panko breadcrumbs
  • 1 cup parmesan cheese, freshly grated
  • 1 teaspoon chipotle chili flakes (adjust to taste)
  • 1/4 cup fresh parsley, chopped
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/2 cup reserved pasta water


Instructions

  1. Heat a large skillet over medium heat and bring a pot of salted water to boil.
  2. While water heats, sauté garlic in 2 tablespoons olive oil over low heat for 2–3 minutes until golden and fragrant.
  3. Push garlic to the side and add breadcrumbs to skillet. Toast 4–5 minutes until golden. Remove and set aside.
  4. Cook spaghetti until al dente. Reserve 1/2 cup pasta water and drain the rest.
  5. In skillet, add remaining olive oil, chipotle flakes, and pasta. Toss over low heat for 1–2 minutes.
  6. Add parmesan, half the breadcrumbs, parsley, and reserved pasta water. Toss until glossy and well coated.
  7. Adjust salt and pepper to taste. Top with remaining breadcrumbs, extra parsley, and parmesan.
  8. Serve immediately with extra olive oil and chipotle flakes if desired.

  • Use fresh parmesan for best results.
  • Toast breadcrumbs until deeply golden for maximum crunch.
  • Adjust chipotle to your preferred heat level.
  • Always reserve pasta water for emulsifying the sauce.
