Description

Buttery, savory Garlic Noodles tossed in a rich soy and oyster sauce blend, finished with freshly grated parmesan and green onions. Quick, comforting, and packed with bold flavor in every silky strand.


Ingredients

  • 12 ounces (340 grams) spaghetti
  • 4 tablespoons (56 grams) unsalted butter
  • 6 cloves fresh garlic, finely minced
  • 2 tablespoons (30 milliliters) soy sauce
  • 1 tablespoon (15 milliliters) oyster sauce
  • 1/2 cup (50 grams) grated parmesan cheese
  • 2 fresh green onions, finely sliced
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper


Instructions

  1. Bring a large pot of salted water to a rolling boil over high heat.
  2. In a small bowl, combine the soy sauce and oyster sauce and set aside.
  3. Place a large skillet over medium heat and melt the butter gently.
  4. Add the minced garlic to the melted butter and sauté for about 1 minute until fragrant. Cook the spaghetti according to package instructions until al dente. Drain, reserving 1/4 cup of pasta water.
  5. Transfer the drained spaghetti to the skillet. Pour in the soy and oyster sauce mixture. Toss well using tongs, adding a splash of reserved pasta water if needed. Cook for 2 to 3 minutes until the noodles are well coated and heated through.
  6. Remove from heat and stir in the grated parmesan cheese until melted and silky. Add sliced green onions, salt, and black pepper to taste.
  7. Serve immediately while warm and glossy, with extra parmesan if desired.

Notes

  • Use freshly grated parmesan for smoother melting and better flavor.
  • Do not let the garlic brown too much to avoid bitterness.
  • Reserve pasta water to adjust sauce consistency if needed.
  • Reheat leftovers gently with a splash of water to loosen the sauce.
