- 1 pound sirloin steak, cut into bite-sized cubes
- 1.5 pounds baby potatoes, whole or halved
- 4 tablespoons unsalted butter
- 5 whole garlic cloves, lightly crushed
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Heat a large skillet over medium-high heat until hot.
- Season the steak cubes evenly with salt and black pepper.
- Add olive oil to the skillet and allow it to heat until shimmering.
- Add the baby potatoes to the skillet and cook, stirring occasionally, until golden brown and fork-tender, about 15 minutes. Remove from the skillet and set aside.
- In the same skillet, add the steak bites and sear for 2 to 3 minutes per side until browned and just cooked through.
- Reduce the heat to medium-low, add the butter and garlic cloves, and stir until the butter melts and the garlic becomes fragrant.
- Return the potatoes to the skillet and toss everything together until coated in garlic butter.
- Remove from heat, sprinkle with fresh parsley, and serve immediately.
Notes
- Pat the steak dry before cooking to achieve a better sear.
- Do not overcrowd the skillet, cook in batches if needed.
