Crispy on the outside and soft on the inside, these garlic butter smashed potatoes are packed with rich flavor and irresistible texture, perfect as a side dish or snack.


Ingredients

  • 1.5 pounds baby potatoes
  • 4 tablespoons unsalted butter, melted
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat your oven to 425°F.
  2. Boil the baby potatoes in a large pot of salted water until fork tender, about 15 minutes.
  3. Drain the potatoes and let them dry slightly.
  4. In a bowl, mix melted butter, minced garlic, olive oil, salt, and black pepper.
  5. Line a baking sheet with parchment paper and place the potatoes on it.
  6. Gently smash each potato using a masher or glass.
  7. Brush the garlic butter mixture generously over each smashed potato.
