- 8 oz spaghetti or linguine
- 1 lb large shrimp, peeled and deveined
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1/4 cup chopped fresh parsley
- Salt and black pepper, to taste
- Grated Parmesan cheese, for serving (optional)
Instructions
- Cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain.
- In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, sauté for 30 seconds until fragrant.
- Add shrimp to the skillet, season with salt and pepper, and cook 2–3 minutes per side until pink and opaque.
- Stir in lemon juice, lemon zest, and chopped parsley.
- Add cooked pasta to the skillet, tossing to combine. If needed, add reserved pasta water to create a light sauce.
- Serve immediately, garnished with Parmesan cheese if desired.
Notes
- Do not overcook shrimp to keep them tender.
- For extra flavor, add a splash of white wine to the skillet when cooking shrimp.
- This dish pairs well with a side salad or garlic bread.
