			- 2 pounds ground beef
- 3 large onions, thinly sliced
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1/2 cup beef broth
- 2 large eggs
- 1 cup breadcrumbs
- 1 tablespoon Worcestershire sauce
- 1 1/2 cups shredded Gruyère cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh thyme (optional)
Instructions
- Preheat your oven to 375°F and lightly grease a loaf pan or line a baking sheet with parchment paper.
- In a skillet, melt butter over medium heat. Add sliced onions and cook slowly, stirring often, for 20–25 minutes until golden. Add garlic and beef broth. Simmer for 2 minutes and set aside to cool slightly.
- In a bowl, mix ground beef, eggs, breadcrumbs, Worcestershire sauce, salt, pepper, half the cheese, and half the caramelized onions until just combined.
- Shape the mixture into a loaf and place in the prepared pan or on the sheet pan.
- Top with remaining caramelized onions and sprinkle with the rest of the cheese.
- Bake uncovered for 50–60 minutes, or until the internal temperature reaches 160°F.
- Let rest for 10 minutes before slicing. Serve warm.
Notes
- For extra flavor, use freshly shredded cheese instead of pre-packaged.
- Double the onions if you want an even richer topping.
- Let the meatloaf rest before slicing to keep it juicy and intact.
