  • 2 pounds ground beef
  • 3 large onions, thinly sliced
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup beef broth
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 cups shredded Gruyère cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme (optional)


Instructions

  1. Preheat your oven to 375°F and lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. In a skillet, melt butter over medium heat. Add sliced onions and cook slowly, stirring often, for 20–25 minutes until golden. Add garlic and beef broth. Simmer for 2 minutes and set aside to cool slightly.
  3. In a bowl, mix ground beef, eggs, breadcrumbs, Worcestershire sauce, salt, pepper, half the cheese, and half the caramelized onions until just combined.
  4. Shape the mixture into a loaf and place in the prepared pan or on the sheet pan.
  5. Top with remaining caramelized onions and sprinkle with the rest of the cheese.
  6. Bake uncovered for 50–60 minutes, or until the internal temperature reaches 160°F.
  7. Let rest for 10 minutes before slicing. Serve warm.
