- 3 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 2 cups low sodium beef broth
- 2 pounds boneless skinless chicken thighs
- 1 tablespoon cornstarch
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1 cup shredded Gruyère cheese
- Fresh parsley, for garnish
Instructions
- In a small bowl, whisk together cornstarch with a splash of beef broth until smooth. Stir in remaining broth, thyme, oregano, salt, and pepper.
- Place sliced onions and garlic in the bottom of the crockpot. Add chicken thighs on top.
- Pour the broth mixture evenly over the chicken and onions.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and cooked through.
- Sprinkle shredded mozzarella and Gruyère on top. Cover for an additional 10–15 minutes until the cheese melts.
- Garnish with chopped fresh parsley and serve warm.
