Description

  • 3 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups low sodium beef broth
  • 2 pounds boneless skinless chicken thighs
  • 1 tablespoon cornstarch
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Gruyère cheese
  • Fresh parsley, for garnish


Instructions

  1. In a small bowl, whisk together cornstarch with a splash of beef broth until smooth. Stir in remaining broth, thyme, oregano, salt, and pepper.
  2. Place sliced onions and garlic in the bottom of the crockpot. Add chicken thighs on top.
  3. Pour the broth mixture evenly over the chicken and onions.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and cooked through.
  5. Sprinkle shredded mozzarella and Gruyère on top. Cover for an additional 10–15 minutes until the cheese melts.
  6. Garnish with chopped fresh parsley and serve warm.
