- 1 cup rolled oats
- 1/2 cup almond flour
- 6 large Medjool dates, pitted
- 1/4 cup unsweetened shredded coconut
- 1/4 cup chopped walnuts (optional)
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/8 teaspoon salt
Instructions
- In a food processor, pulse rolled oats until they form a fine flour.
- Add dates, grated carrots, almond flour, shredded coconut, walnuts, maple syrup, vanilla extract, cinnamon, nutmeg, and salt.
- Blend until a sticky, uniform dough forms.
- Line a tray with parchment paper.
- Use a spoon or cookie scoop to portion the dough, then roll into balls with your hands.
- Optional: Roll in shredded coconut or crushed nuts for texture.
- Chill for at least 30 minutes before serving.
Notes
- Use freshly grated carrots for better moisture and texture.
- If the mixture is too sticky, add more almond flour one tablespoon at a time.
- Store in fridge for up to 5 days or freeze for up to 3 months.
