Description

These flourless carrot cake balls are soft, spiced, and naturally sweetened with dates and maple syrup. They make the perfect gluten-free, no-bake treat that’s both wholesome and satisfying.


Ingredients

  • 1 cup finely grated carrots
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 6 large Medjool dates, pitted
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup chopped walnuts (optional)
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon salt


Instructions

  1. In a food processor, pulse rolled oats until they form a fine flour.
  2. Add dates, grated carrots, almond flour, shredded coconut, walnuts, maple syrup, vanilla extract, cinnamon, nutmeg, and salt.
  3. Blend until a sticky, uniform dough forms.
  4. Line a tray with parchment paper.
  5. Use a spoon or cookie scoop to portion the dough, then roll into balls with your hands.
  6. Optional: Roll in shredded coconut or crushed nuts for texture.
  7. Chill for at least 30 minutes before serving.

  • Use freshly grated carrots for better moisture and texture.
